Try this nutritious and delicious chia pudding with your favourite toppings. We've toppped ours with a trio of fresh berries but you can use coconut or almond flakes for a crunchy sensation.
240 ml light coconut milk or Kefir
1/4 teaspoon vanilla
2-3 teaspoons light agave syrup
3 teaspoons chia seeds
fresh berries like strawberries, blueberries and raspberries
In a bowl, whisk together coconut mik, vanilla, and light agave syrup. Stir in the chia seeds and refrigerate 20-30 minutes or until the pudding is set and the chia seeds are absorbed into the milk. Stir occasionally during chilling to distribute the chia seeds. Once the liquid has thickened, the pudding is ready to eat. Divide between 2 separate glasses and top with fresh strawberries, blueberries, or raspberries. The chia pudding will store in the fridge for up to 3 days.
